From the highlands in Tana Toraja, this coffee is from smallholders that allow their coffee to grow wildly - planting trees in small plots of convenience rather than large farms. The coffee is processed using the special method unique to Indonesian coffee growers: Giling Basah a.k.a., wet-grinding or wet-hulling, which produces a low-acidity, full-bodied coffee.

What I’ve roasted for you is a coffee meant to show off what makes coffee from the Indonesian islands unique. With top notes of nutmeg / brown spice, a filter-brewed cup is full-bodied with balanced brown sugar sweetness. On the nose and backend of the sip is where you find unique notes of sweet pipe tobacco and fragrant, but pleasant, earthiness. As espresso, pull this one short and enjoy another level of sweetness that seems to leave behind the brown spice notes in favor of elderberry fruitiness, propped up by a surprisingly clean sweet pipe tobacco foundation.
